Trying to find a moment to talk with Chef Dani Garcia is like attempting to catch a whirlwind.

The three-star Michelin chef is always on the run; between opening new restaurants, trying out new recipes to working on FOUR books.

In NY for the Wine and Food Festival, we caught up with the personable chef as he worked on the special menu for dinner at his new, much-lauded Casa Dani. (Read our review here.)

Working with SBE’s DISRUPTIVE RESTAURANT GROUP, the restaurant quickly became popular with its take on the comfort food Chef Dani Garcia grew up with in Spain.

 

 

Still, who walks away from a Michelin three-star restaurant we wondered? It turns out Chef Dani has bigger goals; to introduce the world to the food he grew up with in Andalucia, Spain.

“Spain is more than tapas and paellas,” he laments. “It’s great to cook for 50 people every day but I want to bring it to millions.’

A perfect example of this is the extensive tuna dishes he offers at Casa Dani, all sourced from Andalucia, which ‘has the best tuna in the world.’ After trying his Tuna Porterhouse Carpaccio you might agree.

It’s not all fine dining establishments as you might think; Chef Dani is adamant about cooking ‘honest, real, good food’ for everyone.

 

If you ask the Chef to describe his style of cooking he calls it  “Cocinacontradición”, a play on the Spanish words for tradition and contradiction.  It works as his cuisine is based on contrasts, from using home-fresh ingredients but in sometimes novel ways.

 

 

After creating the special menu for the New York City Wine & Food Festival, Chef Dani is off to oversee the opening of his new restaurant in Miami (based around a ‘huge charcoal grill’)  then he jets to Dubai for another new restaurant he’s working on.

See what we mean about trying to keep up with the Chef? We’ll have to be content with eating at his many restaurants.
