Go nuts tomorrow (April 2) for  National Peanut Butter & Jelly Day! What better way than to whip up a gourmet PB&J? We like the ‘King of Monte Cristo’ recipe by Top Chef All-Star Spike Mendelsohn which uses Peter Pan® Simply Ground Peanut Butter. It elevates the classic lunch staple to a whole new level. For more recipe ideas, check out the Peter Pan site.

8 slices country bread

1/2 c Peter Pan® Simply Ground Original Peanut Butter

 ¾ c banana slices

8 slices applewood-smoked bacon, cooked

 2 eggs

2 tbsp milk

1 tsp cinnamon powder

4 tsp butter

Spread bread with Peter Pan® Simply Ground Original Peanut Butter; fill with bananas and bacon to make 2 sandwiches. Press edges of sandwiches together to seal.

Heat large skillet, add butter and melt on medium heat.

Whisk egg, cinnamon and milk in bowl until well blended.

Add sandwiches, 1 at a time, turning to evenly moisten.

Add sandwiches to skillet; cook 2 min. on each side or until golden brown.

Blackberry jam

1 c blackberry preserves

1 tbsp water

In a pot add the preserves and water, heat until smooth.
